Mango Butter Mochi

Mango + butter mochi = happy me. My mother-in-law generously gave me two more Haden mangoes she received from her neighbor, and thankfully these were worm-free! One was riper than the other and needed to be eaten right away. Ideal for making mango butter mochi since you need only one very ripe and juicy mango for this recipe.

The butter mochi part is from a common recipe found in many Hawaii cookbooks, the texture typically chewy and the taste not overly sweet, with a hint of coconut from a can of coconut milk that's added to the batter. The top is simply drizzled with fresh mango juice and sweet mango chunks, which is what I think makes this dessert the easiest local summer treat. My family can finish a pan of mango butter mochi in no time, but I'll drop off a container to share with my mother-in-law. I think she'll really enjoy eating these too.
