Imitation Crab Stuffed Mushrooms

It's one of those rare nights when everyone in my family has their own dinner taken care of and I just have to cook for one person - myself. You all know how much I love my finger foods, so I'm taking full advantage of this opportunity to make one of my favorite pupus, some stuffed mushrooms filled with imitation crab.

Aaahh, these smell so good when they're cooking in the oven. When they come out you really have to control that urge to pop a mushroom in your mouth because of course, if you use common sense, these suckers are HOT! (Ha! I still haven't learned my lesson!) Ya gotta let the shrooms cool down for a few minutes, but don't wait till they've reached room temperature. They taste the best when they're just sliiiiiightly hot.

Imitation Crab Stuffed Mushrooms

Today I used baby bella (cremini) mushrooms because that's what was available at the market, but you could also use white button. I've used these two different mushrooms before and I really don't have a preference. I've noticed the baby bella mushrooms release more liquid than the white button after cooking, but other than that, both mushrooms taste ono to me.
