Cookie Butter Mochi

This is Homecoming Week at my son's high school, with the pep band kicking off the festivities this evening with their annual Spirit Night event. This is such a fun time for the kiddos. I love how they bond and strengthen their fellowship through games and of course, food.

This year's Spirit Night potluck theme was "My Child's Favorite Entree." I've mentioned it before, but my son's favorite dish is mochiko chicken. Nevertheless, there's no friggin' way I was gonna suffer and fry anything in this heat and humidity. So I placed an order for a mochiko chicken party pan at the Loco Moco Drive Inn down the road. Their mochiko chicken is the best in Hawaii Kai, in my opinion.

Cookie Butter Mochi

Since I was off the hook from frying, I made this cookie butter mochi to bring for dessert. I really like making mochi for potlucks because it's easy to prepare, it requires no refrigeration, I can bake and package it hours before the event, and frankly, local kids love eating it. Any flavor mochi will do, but I figured cookie butter was something different.

To make this, I used Lotus Biscoff® Creamy Cookie Butter in the chewy mochi and I also spread some on top. This will hold the generous amount of crushed Lotus Biscoff® Cookies covering the mochi and prevent it from falling off. My son said he and his bandmates enjoyed it! Go Cougars!
