3-Ingredient Kogai-Ajitsuke Dip
If you've ever opened a can of kogai-ajitsuke (Japanese seasoned baby clams), you know it's packed full of flavor. As soon as you break the can's airtight seal you can smell the clams, and once you open the lid all the way up you see these perfect miniature clams marinating in a light teriyaki sauce. And there's a lot of clams in that small 6-ounce can. That's why this dip contains only three ingredients: cream cheese, thinly sliced green onions, and the kogai-ajitsuke.
I like to control the taste of the dip so before I combine the seasoned clams with the cream cheese, I always drain the clams and reserve the teriyaki marinade in a separate bowl. After mixing the three ingredients, I add the teriyaki marinade one teaspoon at a time until it tastes the way I want it to. It's then chilled in the fridge until ready to serve, either with cut vegetables or my family's favorite, thick and ridged plain potato chips.
